Rudy’s Recipe: Cranberry Iced Tea Cooler

This tasty and refreshing drink should cool you off on those hot camping trips! Rudy’s Recipe today is Cranberry Iced Tea Coolers!

Cranberry Iced Tea Coolers

You Need:

– 2 quarts iced tea
– 1 can (6 ounces) of frozen cranberry concentrate, partially thawed and diluted
– 1 cup orange juice
– 1/4 cup of sugar

Make It:

In a large pitcher combine all ingredients and chill. Then serve in ice chilled glasses.

Ahhhhh! Enjoy.

And the painting begins …

Now that the new office building is almost completely under roof they’ve finished drywall and have starting painting the walls.

I really like the color scheme. It will go well with the cabin feel of the overall office. The walls are a nice, warm taupe color. That’s like tan. There are also a few accent walls that are a deep red, which are really nice.

Help Preserve Our Forests

The Emerald Ash Borer is a serious threat to our forests. What are you doing to help prevent it?

First of all … you should know what the Emerald Ash Borer is. It’s an exotic beetle that feeds on ash trees and can eventually kill branches and entire trees. It lives inside ash trees and if you move the wood, you spread the beetle.

Here’s a photo of the little bugger.

Let’s stop it from spreading by promising not to move firewood. The Emerald Ash Borer has already destroyed millions of ash trees, but it’s so simple to prevent. Just don’t move firewood.

Rudy’s Recipe: Chicken Parmesan

Rudy’s Recipe is Chicken Parm … with a sandwich maker. That’s pretty darn cool!

Chicken Parmesan

You Need:

– Bread
– Butter
– Pizza Sauce
– Cooked, sliced chicken breast
– Parmesan cheese
– Mozzarella cheese
– Garlic salt

Make ‘Em:

Butter 2 slices of bread. Spread layer of pizza sauce on EACH inside of bread.

Fill with cooked, sliced chicken breast 1/4 inch thick (you can bake chicken in your sandwich maker or heavy duty foil works well; or better yet, back it at home before you go).

Sprinkle parmesan cheese and mozzarella cheese over chicken. Add garlic salt to taste. Cover with remaining piece of bread. Toast until golden brown.

For an extra garlic flavor, make garlic bread out of your toast by sprinkling garlic salt over buttered bread before placing in sandwich maker.

Okay, I don’t even think I’d have to be camping to make this. I’ll just build a fire in our fire pit at home and cook them! 🙂

Christmas Movie Night … and Santa too!

This Friday night, July 23, our guests at Lake Rudolph will have a special treat!

In honor of their event, Christmas in July, the Santa Claus Christmas Store is sponsoring a Family Movie Night. We’ll be showing “How the Grinch Stole Christmas” followed by “The Santa Clause.” Two movies that are guaranteed to get you into the Christmas spirit.

And … Santa will make a special appearance to visit with kiddos (and adults too)!! Santa will arrive just a tad after 8:00pm CDT. Movies start at 8:30pm CDT, all at the Pavilion.

If you’re really feeling in the Christmas spirit and want to get a jump on shopping, the Christmas store is located in Kringle Place Shopping Center, just across from Lake Rudolph. They’re open daily from 9:00am – 10:00pm CDT. Between the Christmas gifts, collectibles, nativities, fudge and cookies … I think you can find someone for everyone. And you can shop online, in your pajamas even.







Rudy’s Recipe: Baked Spaghetti

Spaghettis is a good that I consider a family favorite. At least I know it’s a favorite with my family! So, I don’t think you should have to go without it while you’re camping.

In light of that, Rudy’s Recipe this week is Baked Spaghetti. Or as my cousin used to call it when she was little “Baked Sketti.”

Baked Spaghetti

You Need:

– 1 large onion, chopped
– 1 clove of garlic, minced
– 4 tablespoons shortening
– 1/2 lb ground beef
– 2 cups water
– 2 cans tomato soup
– 2 teaspoons chili powder
– 1/2 lb uncooked spaghetti
– 1 cup grated sharp cheese

Make It:

Cook onion and garlic in shortening in Dutch Oven. Add beef and cook. Stir occasionally.

Drain excess grease. Mix in the soup, water and chili powder and cook a few minutes longer. Break spaghetti into inch pieces and stir into sauce until all covered.

Cook for about 1 hour. Stir approximately every 15 minutes. Then add cheese to top. Cook another 15 minutes.

Word of the Week: Poomsae

Some of you may know that one of our owners here at Lake Rudolph Campground & RV Resort is Philip Koch. Our other owners are Kristi and Jim George. Kristi just happens to be Philip’s sister. 🙂

We wanted to share the great news that Kristi has been selected for the U.S. National Taekwondo Poomsae Team!

Kristi started Taekwondo back when she was 17.  She competed in sparring for years.  Won the USAT sparring national championships in 1990 and 1991.  Won the collegiate nationals twice.  Got bronze at the world collegiate taekwondo championships!  Competed at World Games and Pan Am Championships!  Kristi stopped competing when she got married, started having children and working a full time job.  Then two of her three kiddos started the sport and she started back as well (after 17 years). And after 17 years it must be like riding a bicycle again because she’s made the national team!

In case you are wondering (I know I did) the more common word for poomsae is forms.  We had to ask Kristi what it meant. It is basically a set series of taekwondo moves that must be performed within stringent specifications.  It is performed on a mat either alone, with a male/female pair or a single gender team of 3 people. Cool huh?

You are then judged by 5 judges and given a score from 1 to 10, similar to gymnastics or diving scoring.  At nationals Kristi won first in pairs and teams and placed second in individuals.  Then at team trials, she placed first in pairs and second in teams.

Rudy’s Recipe: Orange Half Muffins

It’s a bit rainy today, but hopefully this recipe will make things a little brighter.

I love oranges so anytime I have the change to make something with oranges I do. Wanted to share this neat recipe I came across as our Rudy’s Recipe this week … Orange Half Muffins.

Orange Half Muffins

You Need:

– Oranges
– Instant muffin mix
– Aluminum foil

Make ‘Em:

Cut an orange in half and take out the insides.

Put prepared muffin mix in one half of the orange. Put the other half back on the orange and wrap aluminum foil around the whole thing.

Put in hot coals or on a rack to bake the muffin inside of the orange shell. Very tasty and gives the muffin a zesty orange taste!

Rocks & Roofing

Progress on the new office building!! They’ve continued with that fancy siding that we talked about earlier and now they’re onto the roofing. The stonework on the lower portion of the building is also being added.

I love the stone … I think it’s a great look. The roof is a nice green metal. It’s really starting to get that cabin, lodge feel to it!
