World Nutella Day!

Enjoy a few Nutella recipes today to celebrate!

Grilled Nutella & Marshmallow Sandwiches

Makes 2 sandwiches

  • 4 slices soft white bread
  • 2 tablespoons Nutella (or more, or less — depending on your taste!)
  • 40 mini marshmallows*
  • 2 tablespoons butter, divided

*You can also sub in 2 tablespoons (or more!) of marshmallow fluff.

Make Them:

1. Spread Nutella on two slices of bread, 1 tablespoon on each slice. Spread marshmallows out evenly on the other two slices, 20 on each each slice. Pair them together to make two sandwiches.

2. Heat a small skillet or grill pan over medium-low heat, then melt half a tablespoon of butter in the skillet. Put one sandwich in the skillet and cook until the underside is golden brown, about a minute and a half. Add another half a tablespoon of butter to the skillet, flip the sandwich and cook until both sides are golden brown and the marshmallows are melted, about a minute and a half.

3. Wait a minute before slicing, just so that the hot filling doesn’t burn you.

 

Nutella Hot Chocolate

Makes 6 servings

  • 8 cups whole milk
  • 1/4 cup cocoa powder
  • 1 13-ounce jar nutella
  • Toppings of choice (whipped cream, marshmallows, chocolate syrup)

In a slow cooker: Put all ingredients in the slow cooker and cook for 2 hours on low, stirring occasionally. Keep on warm setting until ready to serve.

On a stovetop: Bring ingredients to a simmer over low heat, stirring frequently until everything is combined.

Rudy’s Recipe: Campfire Blueberry Cobbler

You Need:

  • 3/4 cup (1 1/2 sticks) salted butter
  • 2 dry pints fresh blueberries, picked over and washed
  • 1/2 cup plus 1 tablespoon sugar
  • 1 cup unbleached pastry flour
  • 1 1/2 teaspoons baking powder
  • 3/4 cup buttermilk

Make It:

  1. Prepare grill or campfire for medium heat.
  2. Place cast iron skillet on the heat and add 1 stick of butter.
  3. When melted add blueberries and 1/2 cup sugar.
  4. Cook until mixture bubbles and becomes a light syrup, about 5 – 8 minutes.
  5. In medium bowl combine flour, baking powder and remaining butter until it resembles crumbs.
  6. Stir in buttermilk. Mix until the dough just comes together. Don’t overmix!
  7. Drop by spoonfuls on top of blueberry mixture. About four 1/4 cup lumps.
  8. Cover skillet with foil and cook until filing is bubbly, cobbler is firm, and a toothpick comes out clean. About 30 – 40 minutes.
  9. Serve warm … with ice cream of course!

Rudy’s Recipe: Campfire Strawberry Shortcake

You Need:

  • 2 1/3 cups Original Bisquick mix
  • 1/2 cup milk
  • 3 tablespoons granulated sugar
  • 3 tablespoons unsalted butter, melted, plus more for coating the tins
  • 1 cup sliced strawberries
  • Whipped cream
  • Clean pie tins

Make It:

  1. Coat the pie tins with butter and set them aside.
  2. Stir together the Bisquick, milk, sugar, and melted butter until well combined.
  3. Spoon the batter evenly into the buttered tins.
  4. Cover the pie tins tightly with foil and place them directly onto glowing coals.
  5. Cook until the shortcake has risen and is golden around the edges, about 25 minutes, moving the tins a few times for even baking.
  6. Remove the foil and cover the shortcakes with fresh strawberries and cream.

Happy Corn Chip Day!

Happy Corn Chip Day? Is there anything better than delicious corn chips? Plain, BBQ, chili cheese … oh yum.

Fritos Corn Chips

The best use of corn chips ever made be in walking tacos.

You Need:

  • Small bag of Fritos corn chips (or your favorites)
  • Taco meat or chili
  • Cheese
  • Lettuce
  • Salsa
  • Sour cream

Make ‘Em:

Cut open the bag of corn chips along the long side. Spoon in the meat or chili, cheese, lettuce, salsa, and sour cream.

Variations:

Mix up the ingredients and try pulled pork with honey BBQ corn chips. Or use the chili cheese chips version instead of plain. Or try chicken fajita meat with peppers and onions. Oh the variations are endless!

And if you’ll excuse me, I’m on my way to the store to pick up the ingredients to make these!







Rudy’s Recipe: Campfire Banana Boat Foster

You Need:

  • 1 large banana, unpeeled
  • 1 tablespoon dark brown sugar
  • 1/2 teaspoon ground cinnamon

Make It:

  1. Slice an unpeeled banana lengthwise without cutting all the way through the top or bottom of the peel. Gently open it so it’s like a boat, then fill with the brown sugar and cinnamon, pressing them into the flesh without squishing. Wrap the banana tightly in foil.
  2. Cook in the coals of the campfire, away from any active flames, for about 10 minutes. Serve hot … maybe with vanilla ice cream. :-p

Rudy’s Recipe: Cinnamon Sugar Crescents

You Need:

  • 1 package crescent rolls
  • 1/4 cup sugar
  • 1 T cinnamon
  • Wooden skewers

Make ‘Em:

  1. Mix 1/4 cup sugar and 1 T cinnamon on a flat surface.
  2. Separate rolls. Wrap each around a skewer stick.
  3. Roll in cinnamon/sugar mixture.
  4. Cook over fire rotating frequently.
  5. For a glaze (optional), mix powdered sugar and water and drizzle over each roll.






Rudy’s Recipe: S’mores Pizza

S’mores Pizza

You Need:

  • Crescent roll dough
  • Chocolate sauce – like Nutella
  • Miniature marshmallows
  • Graham crackers, crushed

Make It:

Remove crescent roll dough from the canister and separate into triangles. Throw them on the grill. Flip after one minute and spread on the chocolate!

Sprinkle on the crushed graham crackers and top with miniature marshmallows.

To toast the marshmallows cover the pizza and grill with aluminum foil like a little tent. Be careful! Cook for about 30 more seconds and then you’re ready to eat. Carefully remove from the grill and enjoy.

Okay, now excuse me while I run over to Holiday Foods and then to the nearest campsite to make these!

Rudy’s Recipe: Savory S’mores

Savory-Smores

You Need:

  • Mushrooms
  • Blue cheese
  • Bacon

Make ‘Em:

Stuff mushrooms with blue cheese. Wrap with a strip of bacon.

Roast over the campfire until cheese is bubbly and bacon is done.

Rudy’s Recipe: Campfire Cinnamon Rolls

Remember those Campfire Cakes we shared a while back? These are similar and just as yummy!

Campfire Cinnamon (or Orange!) Rolls

Orange-Rolls

You Need:

  • 4 Oranges
  • Canister of Cinnamon (or orange!) rolls

Make ‘Em:

Cut each orange in half. Scoop out the flesh and use for fruit salad or just eat them as is. 🙂

Open your can of cinnamon or orange rolls and put a roll in each orange half. Put the finished orange halves on a cookie sheet or something you can use on the campfire. Cover with aluminum foil and put them on the fire.

They will rise as they bake. Keep an eye on them. Once they have puffed and risen over the top of the orange, pull them off to check that they are done.

Add the icing and eat ’em up!

Rudy’s Recipe: Easy Snow Cream

So last week while I was stuck at home (because I couldn’t get out of my driveway that was under eight inches of snow) we made this yummy snow cream. It is a treat I’ve always loved. My mom made it for me every time it snowed when I was growing up.

Easy Snow Cream

You Need:

  • 1/3 cup Granulated sugar
  • 1 cup Milk
  • 1 pinch Salt
  • 1 teaspoon Vanilla extract
  • 8 cups of fresh, clean snow (grab this as the last step)

Make It:

In a large bowl whisk together milk, sugar, salt, and vanilla. Scoop up the clean snow and immediately stir it into the milk mixture until you reach the desired consistency. Top it with sprinkles, or chocolate syrup, or whatever your fancy!

**As a disclaimer, consume snow at your own risk. You may also make this recipe with shaved ice. 🙂
